For this reason, our production is dedicated exclusively to gluten-free pasta, eliminating any possible risk of cross-contamination. Our factory operates in a strictly controlled environment, where it is forbidden to introduce any food containing gluten, thus guaranteeing 100% authentic and safe gluten free quality.

Every single ingredient is carefully chosen to ensure the absence of contamination. Our gluten-free pasta uses only rigorously selected flours, which arrive at the factory with certifications attesting to their purity. Each batch is checked upon delivery to ensure that it meets the 20 ppm gluten limit, in accordance with current regulations, and is completely free of GMOs and allergens.
during production
Production is a delicate stage, where safety and quality must be constantly monitored. Each batch of pasta undergoes conformity testing and moisture content verification to maintain optimal organoleptic characteristics. In addition, cooking and taste tests are carried out to ensure that the product maintains the right flavor and texture. These checks ensure that each pasta package reflects our quality standards, offering a safe and tasty product.

The pasta is packaged using artisanal methods that include careful visual inspection of each piece. Long pasta is packaged by hand in food-grade cardboard trays and then wrapped in plastic film to ensure freshness and safety. Short formats are checked frame by frame to ensure that each package meets the required quality standards.
and monitoring over time
Each supply of flour is sampled and stored for a period of at least 36 months as part of our self-control system. This allows us to ensure the quality and traceability of raw materials over time, while maintaining a reference sample for any additional analysis. This scrupulous monitoring testifies to our commitment to a consistently safe product, from initial selection to final consumption.
100% Made in Italy
We produce pasta in an area renowned for quality and food safety. For us, “100% made in Italy” means using only the best flours, traceable from cultivation to milling. All our processes are carried out with the most advanced technologies and in compliance with Italian regulations. Without the use of additives or added sugars, our pasta reflects genuine and safe production.
Artisanal packaging
After careful drying, we check that the moisture content of the pasta is less than 13 percent, ensuring optimal preservation. Our long pasta is packaged by hand in food-grade cardboard trays and wrapped in plastic film to ensure freshness and safety. Short formats, before being packaged, undergo a careful visual inspection, maintaining the quality standards our customers expect.
Certifications and approvals
All of our gluten-free products are authorized by the Ministry of Health and included in the national register of “gluten-free” dietary products dispensed by the National Health Service. This authorization demonstrates our commitment to the safety and quality of our foods, specifically formulated for those with gluten intolerance.
